Stacy's Hammies
It’s been a while hasn’t it?
I’m still figuring out my relationship with the internet after launching a book and dissertation into the world in the last two years. It’s been a bit weird, but I believe in long-form writing, so we’re just going to keep showing up and we’ll see what turns up. In the meantime, I’m focusing a lot of my attention to my email crew (I really have to come up with a better name). And I promised my email crew this recipe so without adieu… Here are what I affectionately call “Stacy’s Hammies.”
I don’t remember what the occasion was - whether I was sick or we had just welcomed a baby - but my friend Stacy came over with these ham and cheese croissants and they’ve been a staple in our family ever since. I remember eating my first bite, thinking I had tasted a bit of heaven and immediately texting her “I HAVE TO HAVE THIS RECIPE.” Over time, I’ve lost the recipe and we just wing it, so this recipe might not even be the original hammy. But it’s the recipe we love and named it after our girl, Stacy, and her saving my life that evening. That was about a decade ago, and our family has been using this recipe ever since (so you know it’s legit if it’s lasted that long).
I’m not even kidding, we currently have 10 of them frozen in our freezer so Jude can pop them out and stick them in the oven for a quick lunch (they’re his FAVORITE). These are also my go-to sandwiches to make ahead when we’re going to the lake, we’re having a crew of folks over, or I just want to bless my future self by having an easy meal on hand. So without further adieu, I give you Stacy’s Hammie’s.
Stacy’s Hammies
(Makes 12 croissant sandwiches)
Ingredients
1 dozen large croissants (I get mine from Sam’s Club or Costco)
1 block of cream cheese
1 bottle of Honey Mustard (you’ll use a little over a half of a bottle)
2-3 lbs ham (I use a thin sliced honey ham)
12 Colby Jack cheese slices (cut in half)
Instructions
Soften your cream cheese (you can leave it out if you think ahead OR if you’re like me and you always forget, warm it up in the microwave). Once it’s softened, pour about a half a bottle of the honey mustard sauce into the bowl with the cream cheese and mix it together to make a creamy sauce. Slice your croissants in half, and on the top half, spread a light amount of the sauce. On the bottom half, spread a generous amount of the sauce. On the bottom half, place 4-5 slices of ham and then place the halves of Colby Jack on top of your meat , and place the top half of the croissant on. Please note, this last time I made a dozen of these, I used exactly 4 pieces of ham and used up 2.5 lbs of my deli meat. So if you only have 2lbs on hand, do 3 slices… but in my humble hammy opinion, 4-5 slices is the sweet spot on these.
Once your sandwich is assembled, wrap the sandwich in foil. Now you can do 1 of 3 things. (1) You can toss them in the oven at 350 degrees for 15-20 minutes to eat right away. OR (2) you can toss them in the fridge to eat later that night for dinner or for the next day. OR (3) you can pop these babies in the freezer and cook them at a later date. When frozen, we bake them at a higher temp (we do 375 on my current oven, but my TX oven we did 400) for about 30-45 minutes. We bake them with their foil wrappers on and then use the foil wrapper as a plate because we’re really fancy around here. Combine these with anything: chips, a pasta salad, fruit, ANYTHING (seriously, you can dress this hammy up or down)-and you’ve got yourself a full meal.
For all you recipe followers, my apologies on the lack of actual measurements. I mostly wing it in the kitchen and am not a real food blogger… just an ordinary human who has to feed an extraordinary amount of mouths on the regular, so please excuse my unofficial normal foodie language.
My prayer is that these sandwiches bless you like Stacy blessed us all those years ago. Sometimes, you just need the simplicity of a warm savory sandwich, and this one DEFINITELY scratches that itch.
